Crockpot Chicken and Mushrooms
I haven’t tried this in my Instant Pot, so this is my best estimate: Use saute mode to brown the chicken thighs in olive oil, then remove them to a clean plate and saute the onion and mushrooms (and garlic during the last 30 seconds). Press cancel to turn off saute, pour in 1 cup of broth to deglaze the pot, and scrape up any browned bits stuck to the bottom.
Ingredients
- ½ teaspoon paprika
- 1 cup low sodium chicken broth
- 8 ounces crimini mushrooms sliced
- 1 cup orzo pasta
- grated Parmesan cheese and chopped fresh parsley optional, for serving
- 1 tablespoon olive oil
- 1 ½ pounds boneless, skinless chicken thighs see note below
- ¼ teaspoon salt
- ¼ teaspoon pepper
- 1 small onion chopped
- ½ teaspoon garlic powder
- 2 cloves garlic minced
- ½ teaspoon dried oregano
