BAKED SPINACH MUSHROOM QUESADILLAS
We loved these. I added retried beans, used vegan
Cheddar cheese, added onions and garlic to the mushrooms.
INGREDIENTS
- olive oil (enough to lightly coat the tortillas)
- 1 cup shredded cheddar
- 1 cup shredded mozzarella
- 3 cups roughly chopped spinach
- 4 tortillas (8 inch)
- 8 ounces sliced mushrooms
