HEALTHY CHICKEN ENCHILADAS
A healthy Chicken Enchilada recipe that’s easy to make for a weeknight dinner or you can prep ahead on the weekend, freeze and heat in the oven when you need them.
INGREDIENTS
- 1 tablespoon olive oil
- onion, finely diced6
- chicken thigh fillets, sliced into strips
- 2 cloves of garlic, chopped
- 1 tablespoon cumin
- 1/2 teaspoon dried oregano
- 1/2 teaspoon smoked paprika1/2 teaspoon salt
- /4 teaspoon black pepper
- 1 tablespoon apple cider vinegar
- 300ml tomato puree /passata
- 1 cup chicken stock (or vegetable stock)
- 1 can black beans, drained and rinsed
- 1/2 cup frozen corn
- 8 tortillas
- 1/2 cup sour cream
- 1/2 cup cheese, grated (any variety)
