Spring & Summer Avocado Toast
This has been a favorite of mine for many years. I felt affirmed when I first saw you post the same recipe! This morning my one son called to have breakfast with me, just to talk. Instead of going out, I suggested he come here for avocado and egg toast! He thought that would be great, saying he likes avocado! I turned on my internet to find you having the same thoughts this morning! Had to tell you the ‘coincidence’!! This recipe lives on to the next generation!
INGREDIENTS
Optional extras: hot sauce or salsa; slice of vine-ripened tomato; ham, cooked bacon or smoked salmon; fresh basil and/or chives
1/3 -1/2 of a ripe Haas avocado (precise amount depends on personal preference and size of avocado)
1 slice whole grain bread (use gluten-free if needed)
1 hard boiled egg, peeled and minced*
Kosher salt and black pepper to taste
