VEGETABLE BREAKFAST SCRAMBLES
Made this exactly as directed yesterday for breakfast and loved it so much that I made it again today for lunch. It was delicious!INGREDIENTS
- 6 grape tomatoes, sliced in half
- 1/4 avocado, sliced
- 2 cups spinach
- 2 large eggs
- seasoning of choice
- 1/2 Tbsp butter
- 1/2 bell pepper, diced
- pinch salt and pepper
- 1/4 cup hummus
