Slow Cooker Butter Chicken
I made this for a quick dinner tonight and it was sooo easy and super yummy! Sometimes I just get a butter chicken itch and I love that I can just throw ever in the crockpot. However, I did not add the curry paste (didn’t have it on hand), I instead replaced it with Garam masala omitted the turmeric and added cumin. This is definitely a keeper, thanks!!
Ingredients
- 14.5 oz can coconut milk
- 6 oz can tomato paste
- 2 teaspoons curry powder
- 2 pounds boneless skinless chicken breasts (cut into bite sized pieces)
- 1/2 sweet yellow onion (diced)
- 3 teaspoons jarred minced garlic
- 1 tablespoon red curry paste
- 2 tablespoons butter
- 1/4 cup heavy cream (for later)
- 1 teaspoon salt
- 1 teaspoon turmeric
- 2 cups Basmati Rice
- 1/2 teaspoon ground ginger
