Blueberry Baked French Toast
Yum, I’m missing the summer blueberries now. Looks good and something to keep in mind when the kids are home when I’m actually making french toast for more than one person.
That is one thing I miss being gluten free. On Sunday mornings we would take the left over challah and make french toast with it – so good!
Ingredients
- 1-1/2 cups milk
- 1/4 cup all purpose flour
- 1/4 cup packed brown sugar
- 3-4 cups blueberries fresh or frozen
- 2 tbsp maple syrup
- 1/4 cup cold butter cubed
- 3 large eggs
- 3/4 french loaf or other crusty bread
- 1-1/2 tsp lemon extract
- 1 tbsp lemon juice
